A simple gluten free meal

Now what (get it?) is a simple gluten free meal?
 
We cook gluten free meals more than we realise and it isn’t hard to eliminate gluten products from your cooking. Also, grocery stores offer such a variety of gluten free products that your favourite recipes can be easily adapted and taste just as good. Some delicious gluten free meals include salads, risottos and curries, pastas and lasagne (using GF pasta) just to name a few.

A popular gluten free meal that I love to cook is frittata. Frittata is an egg based dish similar to an omelet but heartier. Traditionally they are cooked on the stove in a pan but I prefer to bake mine. It can be eaten for breakfast, lunch or dinner; is nutritious and tasty and can be kept in the fridge for about 4 days so you can enjoy it for longer!


FABULOUS FRITATTA

serves 6-8 (large pieces)

can be eaten cold or hot


What you'll need:

35cm round cake tin or large rectangular lasagne dish

baking paper

big mixing bowl

 

14 eggs

1 ½ cups sour cream

2 cups grated tasty cheese

3 tomatoes diced

1 capsicum diced

1 red onion diced

2 cups English spinach roughly chopped

oregano, salt, pepper  (1 teaspoon of each)

 

Instructions:

pre heat oven to 180 degrees

line tin with baking paper to fit

place all ingredients in a bowl and mix together until combined, then pour into tin

put in oven and cook for approximately 40-60 minutes or until it is firm in consistency (not wobbly)

allow to cool a little before cutting

Its as easy as that!

 

Ways to serve:

1.       DINNER - heated with a side salad – a simple rocket and parmesan salad is nice

2.       BREAKY - on crunchy toast with roast tomatoes

3.       NIBBLY - as a pre dinner snack or for a party (cut into small bite size pieces)

4.       LUNCH – in a nice bread roll with ham, tomato and fresh basil

 

NB: You could use smaller tins and make 2 frittatas from this recipe and freeze one of them for another time. Keep them in the freezer for about 2 months (allow for it to cool before freezing) and remember to label and date the container.
