Quick and Easy Muffins
There is nothing better than a homemade muffin! This quick and easy recipe is a great last minute option when people tell you they are coming to visit at short notice.
It is versatile enough for it to be as simple, healthy or as naughty as you like. They keep in an air tight container for 2-4 days, can be heated and served with butter or ricotta, or can be frozen for enjoyment at a later date. A great mid morning or afternoon snack or even dessert with a little ice cream!
Recipe
Preparation time: 10 minutes
Cooking time: 15-20minutes
Ingredients
- 2 cups self raising flour (or wholemeal self raising)
- 1 cup caster sugar
- 2 eggs
- ½ cup vegetable oil (not olive)
- 200ml milk
- 2 teaspoons vanilla essence
- 1 ½ to 2 cups fruit**
Bakeware
- 12 cup muffin tin
- 12 patty cases
Method
Pre heat oven to 180 degrees
Put all ingredients in a bowl and mix until combined – do not over mix just stir until all ingredients are mixed together
Spoon mixture into the muffin tin lined with patty cases
Bake for 15-20-minutes until springy on top. Or -you can poke one with a skewer and the skewer comes out clean, they are ready.
**this is the basic recipe for a delicious muffin. When it comes to the fruit, choose whatever you like – seasonal fruits are best. Some great combinations I have tried include:
- 2 cups chopped tinned peaches or pears with one teaspoon of cinnamon
- 2 bananas chopped with half a cup of chopped chocolate (or chocolate buttons)
- 1 ½ cups blueberries and zest of one lemon
- 2 cups chopped apple and 1 teaspoon of cinnamon
- 2 cups fresh strawberries with ½ cup chocolate buttons
You can use tinned or frozen fruit if the fruit you would like to use is too expensive or out of season
