It can be hard enough getting yourself out the door on time in the morning let alone making sure that what you and your family members have in their lunch box is fresh and healthy. This is where preparing food the night before can come in handy.
You don’t have to be a Masterchef to whip up some great fresh and healthy snacks and meals either. In this edition of Health and Fitness tips from Nikki, she offers some great advice and ideas on how to prepare easy snacks and meals for the family that are healthy, fresh and FAST!
Tip #1: Limit rich cheeses and creamy dressings and go for wild vegetables, salads and freshly baked ingredients. Baked potatoes are a great base for any meal and can be topped with other veggies, baked beans or salsa. Get creative!
Tip #2: For the grocery shopping: Look for foods, snacks and choose meals that have lots of natural colours. The more (natural) colour in your food generally the richer it is in vitamins and nutrients. Also, grab healthy snacks for keeping in the fridge and cupboard such as tubs of yoghurt, nuts, muesli bars and pieces of fruit.
Tip #3: Make sure you eat enough- Pile your plate with fresh salads/vegies and a lean piece of meat or fish. Eating lots of the good stuff during meal times will help you avoid feeling the need to scoff down a packet of chips 30 minutes after eating because you’re still hungry.
Tip#4: Plan ahead: Chop veggies like carrots, celery and cucumber and store them in the fridge in containers. Always have a good dip in the fridge like Hummus or Beetroot dip on hand. If anyone gets hungry they can grab out the chopped vegetables and dip for an instant delicious snack! Perfect for when friends come round too.
Tip#5: Breakfast is important: Everyone says it, but it really is true. So make sure you get up an extra 10 minutes early if you don’t already to enjoy a good healthy breakfast to kick start the day. Porrige is a delicious cheap and easy option for Winter.
Here’s a fast and easy recipe that tastes fantastic. Perfect for whipping up when your mates are coming round or for a snack for movie night with the family:
One of our favourites - Amazingly Simple Avocado Salsa
- 2 x ripe avocado chopped into small cubes
- salt and pepper to taste
- ½ cup chopped coriander
- ¼ cup chopped parsley
- 1 tblsp lime juice
**Add 1 chopped mango - optional
Put all ingredients into one bowl and stir through gently – for a more pureed dip for put everything in a food processor and blend. Delicious on pita bread, organic corn chips, sliced vegie sticks or rye crackers and tomato. YUM!
