School/Work Lunches!

I'm soooo sick of sandwiches.  Leftovers from last night's dinner is always a good alternative, but I'm struggling for ideas.  I find making lunches such a chore, but can't afford to keep buying them.

Hit me with some ideas!

    In winter I love soups. When you make a pot at home you can freeze them in takeaway containers and then heat them up when you want them.

    Oh - that is why we have our recipe section on the blogs! I would love to hear what recipes you might like?? There are some really easy things that you can cook and take for lunch and they seem like they might be difficult, but they are actually quite easy.

    Check out our frittata recipe as frittata is really versatile and you can have it for breakfast, lunch or dinner. I like to put it in between some nice crunchy bread as a sandwich - and it keeps you nice and full!

    I am going to post my ridiculously easy sausage rolls this afternoon so stay tuned!!

    Well...I'm certainly not going to agree with y'all on the soups!

    Have you tried simply toasting a sandwich - it makes a world of difference. Making them on interesting bread (like a bagel) makes them more exciting also and including some gourmet style ingredients. My fav gourmet sandwich combo is basil pesto, pumpkin (you can cook some up at the start of the week and it stores well in the fridge), fetta, tinned roasted capsicum and rocket. Whack it in the sandwich toaster when you get to work. YUM!

    Seriously, what is it about toasting a sandwich that changes it so much for the better? Especially when there's cheese involved. Cheese is the poor cousin of melted cheese.....yes I'm aware that makes no sense!

    Anyway, gonna try the easy sausage roll recipe on the weekend, will let you know how it goes!

    Mmmm toasted sandwiches....

    I must go and check out the recipe section.  Those sausage rolls sound yummy. 

    I usually leave some tins of tuna at work too because it's really easy when you get busy.  But I worry about grossing my colleagues out with the smell!

    I made some really easy pies on the weekend - lined a muffin pan with frozen puff pastry, roasted some pumpkin, and added that with some feta cheese, and a beaten egg and a bit of cream.  Really easy and yummy.  I made a big batch so I can bring them to work with me.

    I made the sausage rolls on the weekend...success. They were so easy and equally as tasty! Give it a go.

    Ever heard of a toast sandwich. Its not a toasted sandwich its a slice of toast between two pieces of bread. You add some spread or meat or salad or whatever in as well. Its a yum twist on a normal sandwich.

    Toast sandwich sounds interesting...kinda like a chip sandwich-mixing the soft with crunch-I like it!

    Mmm... chip sandwiches are great! Both types, the ones with hot chips and the ones with crisps
